  • 68 organic lemons (use organic to avoid pesticides on the zest)
  • 1 liter (4 cups) high-proof vodka (at least 80 proof)
  • 2 cups granulated sugar
  • 2 cups water

Instructions

  1. Wash and dry the lemons thoroughly. Using a vegetable peeler or zester, remove the yellow zest without including the bitter white pith.
  2. Place the zest in a large glass jar and pour in the vodka. Seal tightly and store in a cool, dark place for 5–7 days, shaking gently once daily.
  3. In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Allow the syrup to cool to room temperature.
  4. After steeping, strain the vodka mixture through a fine-mesh sieve or cheesecloth into a clean container. Discard the zest.
  5. Add the cooled syrup to the strained liquid and stir well.
  6. Pour the limoncello into sterilized bottles or jars. Store in the freezer for at least 24 hours before serving.
