Description

- 6–8 organic lemons (use organic to avoid pesticides on the zest)
- 1 liter (4 cups) high-proof vodka (at least 80 proof)
- 2 cups granulated sugar
- 2 cups water
Instructions
- Wash and dry the lemons thoroughly. Using a vegetable peeler or zester, remove the yellow zest without including the bitter white pith.
- Place the zest in a large glass jar and pour in the vodka. Seal tightly and store in a cool, dark place for 5–7 days, shaking gently once daily.
- In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Allow the syrup to cool to room temperature.
- After steeping, strain the vodka mixture through a fine-mesh sieve or cheesecloth into a clean container. Discard the zest.
- Add the cooled syrup to the strained liquid and stir well.
- Pour the limoncello into sterilized bottles or jars. Store in the freezer for at least 24 hours before serving.
Notes
- For best results, use fresh, organic lemons to ensure vibrant flavor and pesticide-free zest.
- Limoncello improves with age, so feel free to let it sit for an additional week or two for deeper flavor.
