- 1 tablespoon olive oil or avocado oil
- 1 pound boneless, skinless chicken thighs (or beef chuck roast for variation)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth (or vegetable broth)
- 1 cup heavy cream
- 2 cups cauliflower florets (or broccoli for variety)
- 1 cup shredded cheddar cheese
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Select the “Sauté” function on your Instant Pot and heat the olive oil. Add the chicken thighs and brown them on both sides (about 3–4 minutes per side). Remove and set aside.
- In the same pot, sauté the diced onion until translucent (about 3 minutes). Add the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth, scraping the bottom of the pot to deglaze it. Add the cauliflower florets, thyme, salt, and pepper. Return the browned chicken to the pot.
- Seal the Instant Pot lid and set it to “Pressure Cook” or “Manual” for 10 minutes. Allow the pressure to release naturally for 5 minutes, then perform a quick release.
- Open the lid, stir in the heavy cream and shredded cheese until melted and creamy. Adjust seasoning as needed.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a vegetarian option, replace chicken with tofu or mushrooms and use vegetable broth.
- Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
